Maple Blueberry Pancakes
Nothing better on a Sunday morning than Blueberry Buttermilk Pancakes with warm Maple Syrup, a few strips of Bacon and a Mimosa made with fresh squeezed Orange Juice and Aloria Vineyards Divinity Sparkling Wine.
My basic Pancake recipe can be made with or without the Buttermilk and it makes about 6, 6-inch pancakes. Using 1/2 a basket of Blueberries leaves some for garnish or for floating in your Mimosa.
I like to cook the Bacon in the oven on a wire rack placed on a baking sheet with edges, not a flat cookie sheet. Splurge on some high quality thick cut Bacon. Lay out 6 strips on the rack, turn your oven on to Bake at 400 F. Slide the baking sheet in while the oven is cold. In my oven, when oven has heated up, the Bacon is done. Pay attention to the “beep” telling you the oven is hot an the smell coming from within. It smells best right when it’s done.
Meanwhile, in a large bowl combine:
- 1-1/2 cups Bread Flour
- 3 tsp Baking Powder
- 1/2 tsp Salt
- 2 Tbsp Sugar
Mix well with a wire whisk to combine the ingredients.
Put 3 tbsp Butter in a microwave safe dish and heat it for 45 seconds in the Microwave. (Or use your own favorite way to melt Butter),
Buttermilk is thick. I like to use 1/2 cup milk and 1 cup Buttermilk. If you use more Buttermilk, you need to increase the quantity of liquid to get the right batter consistency. Make a pocket in the dry ingredients and add:
- 1 egg
- 1-1/2 cups milk/buttermilk.
Mix with your wire whisk while adding the liquid slowly. It should be thick like (good) Maple Syrup when you are done, not thin like water or clumpy like Oatmeal cookie dough. You may have to add less milk (hence add it slowly) or more to get the right consistency. My notes say “medium thin” – whatever that means.
Finally add the Melted Butter and 1/2 basket of washed and dried Blueberries. You can also sprinkle the Blueberries on while cooking, if you wat some with and without. I sometimes forget the butter and find it the next day in the Microwave and wonder why the pancakes seemed different.
